Bold Scarlet Ruby Recipe

- Small Bowl (for the dressing)

Ingredients
- 4 medium-sized Beets
- ¼ cup Orange Juice squeeze it fresh!
- 2 tablespoons Lemon Juice also fresh!
- 1 teaspoon Dijon Mustard
- Just over ⅓ cup Olive Oil
- 1 tablespoon Honey
- A pinch of Salt and Pepper
- 4 cups Mixed Greens like a mini jungle
- ½ cup Goat Cheese crumbled
- ½ cup Candied Walnuts for a sweet crunch
- Some Fresh Dill or Parsley for garnish
Instructions
- Roast the Beets: Preheat oven to 400°F. Peel and chop beets, mix with olive oil, salt, and pepper, and roast for 30-40 minutes.
- Make the Dressing: Whisk together orange juice, lemon juice, mustard, olive oil, honey, salt, and pepper.
- Assemble the Salad: Toss greens with dressing, add beets and goat cheese, more dressing, top with walnuts, and garnish with herbs.
