Southern style Chicken Salad Recipe

Ingredients
- 1 Lemon Pepper Rotisserie Chicken Pulled
- 1/2 Cup Duke’s Mayonnaise
- 2 Hard Boiled Eggs Finely Diced
- 1 to 2 Stalks of Green Onion Finely Chopped
- 3 to 4 Tbsp Sweet Relish or Salad Cubes
- 1 Tbsp Dijon Mustard
- 1 Tsp Ranch Powder
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Cajun Seasoning
- 1/4 Tsp Lemon Pepper Optional
- 1 Tsp Granulated Sugar
- Salt and Pepper to Taste
- 1 Tsp Olive Oil
Instructions
- Pull the meat off the rotisserie chicken and place it in a mixing bowl.
- Add mayo, diced hard-boiled eggs, finely chopped green onion, sweet relish, Dijon mustard, ranch powder, garlic powder, Cajun seasoning, lemon pepper, sugar, salt, and pepper.
- Drizzle olive oil for moisture.
- Mix everything together until well combined.
- Serve on a bed of lettuce, as a sandwich filling, or with crackers.
