Layered Taco Salad Recipe

Ingredients
- 1 Tbsp avocado oil or olive oil
- 1-1/2 lbs ground turkey or ground beef
- 2 Tbsps homemade taco seasoning
- 1 – 6 oz jar salsa red or green
- 2 large heads of romaine or iceberg lettuce chopped
- 1 – 15- ounce can of black or pinto beans rinsed
- 2 cups cherry tomatoes quartered
- 1 cup shredded cheese of choice
- 1 cup plain Greek yogurt
- 1 large avocado diced
- 1 fresh lemon or lime juiced over the avocado
- 1 cup crumbled corn tortilla chips
Instructions
- Heat oil in a skillet over medium heat. Add and Cook the turkey or beef until it turns brown. Stir in taco seasoning and salsa. Simmer for 5 minutes.
- In a serving dish, start layering: lettuce, beans, meat mixture, tomatoes, cheese, Greek yogurt, avocado, and tortilla chips.
- Repeat layers until all ingredients are used, finishing with a sprinkle of cheese and tortilla chips on top.
- Serve immediately, tossing everything together at the table.
