Ingredients
- 1 lb dried navy beans
- 1 medium onion diced
- 3 tbsp yellow mustard
- 3 tbsp ketchup
- 6 tbsp molasses
- 1/2 tsp pepper
- 1/2 tsp salt
- 1 1/2 cups reserved cooking liquid
- 12 oz bacon cooked and chopped
Instructions
- Soak navy beans in water overnight. Empty the water and wash them the following day.
- In a large pot, cover the beans with fresh water and bring to a boil. Simmer for about 45 minutes to 1 hour until they're tender but not mushy. Reserve 1 1/2 cups of the cooking liquid, then drain the beans.
- Preheat the oven to 325°F (165°C).
- In a baking dish, mix together the cooked beans, diced onion, mustard, ketchup, molasses, salt, pepper, reserved cooking liquid, and chopped bacon.
- Cover the baking dish with foil and bake for 2 to 2 1/2 hours until the flavors meld together and the sauce thickens. Check occasionally and stir gently.
